Barbecue Brisket Sandwiches

Cooking brisket isn't really a recipe.  It's more of a process.  You rub the brisket all over with a dry rub and cook it for a really long time until it's tender.  My husband loves the process on a Saturday or Sunday (usually during football season) he will prep the meat and let it sit in our smoker all day at about 200 F.  There is something about smoked meat that is just so good and the smell while it's cooking...Wow.

Ingredients:

1 3-4 pound brisket
1/4-1/2 cup dry spice rub (store bought is fine we usually make our own with sea salt, black pepper, red pepper, and garlic powder)
1/2-1 cup barbecue sauce 
onion buns or sandwich bun of your choice

Rub the brisket all over with your favorite spice rub.  Let sit out a room temperature for about an hour then place the brisket straight on the rack of the smoker and walk away.  Check periodically to make sure the temperature doesn't get too high 200 F is the goal.

After 4-5 hours remove the brisket from the smoker and wrap in aluminum foil.  Place the wrapped brisket in a baking pan and put in the oven at 200 F over night (about 8 hours).

The next morning take the brisket out of the oven and put back on the smoker for a few more hours until tender.

Slice the brisket and toss in your favorite barbecue sauce.  Pile on top of an onion bun and enjoy.

Slow Cooker Roast Beef Sandwiches

When I saw this recipe from Samantha at Five Heart Home I knew I had to try it.  I love french dip sandwiches and to be able to make something similar at home is fabulous.  My husband loved these sandwiches.  I liked that it was a different way to use a beef roast, in the slow cooker, without being pot roast.  Now, I have nothing against pot roast, but I always enjoy trying something new, and I think pot roast is better on cool and/or rainy days (don't have a lot of those here in Honolulu--I'm not complaining).  This roast beef is slow cooked in beef broth and dark beer.  The beer is optional, but it helps add rich color and flavor to the sauce.

Slow Cooker Roast Beef Sandwiches


Ingredients:

3-pound beef roast
12 ounces dark beer
2 cups water
1 Tbsp beef base/bullion (I used Better than Bullion the normal ratio is 1 tsp base per cup of water so if you use another type of bullion measure accordingly)
1 Tbsp Worcestershire sauce
3 Tbsp garlic powder
1 tsp onion powder
1 tsp dried thyme
salt and pepper to taste
French bread baguette
provolone cheese slices


Season the beef roast on all sides with salt and pepper.  Heat a heavy (cast iron) skillet over medium-high heat.  Sear the roast, for a minute or more on all sides until deep golden.


Place the roast in the slow cooker.  Pour the water into the skillet while still hot, stirring and scraping the bottom of the pan, to deglaze it and add to the slow cooker.  Pour in the beer, add the bullion, Worcestershire, and spices.  Cook on low for at least 8 hours the longer the better (this was even better the second day after cooking for about 5+ hours more).


Serve shredded beef on a baguette roll, top with cheese and broil until melted.  Serve sauce on the side for dipping.  Tastes great with a beer and makes great gameday fare or dinner for Monday night football.
