8 Game Day Recipes

Yum

A round-up of my favorite gameday recipes.  From drinks to breakfasts snacks and meals there is something for everyone.

8 Game Day Recipes: A round-up of my favorite gameday recipes. From drinks to breakfasts snacks and meals there is something for everyone.

Yay College Football season has begun.  The first games were Thursday, but my team plays Saturday.   I love football season it's one of my favorite sports to watch and I like to have snacks and/or meals to go with the games.  I thought it would be great to share some of my favorite gameday recipes.  I mostly enjoy these recipes during football season, but they are great for watching any sport.

Homemade Bloody Mary Mix: A simple bloody mary mix made from tomato paste.

Nothing's like a spicy bloody mary to help you wake up.  With 6 AM kickoff (we're 6 hours--5 when daylight savings ends--behind eastern standard time) on Saturdays they are necessary.  My husband recently bought us an espresso machine so I hope to share some espresso recipes during football season this year.  Stay tuned.

Loco Moco: White rice smothered in brown gravy and a beef patty topped with a fried egg. The Hawaiian breakfast of champions.

Enjoy a Hawaiian breakfast of rice topped with a beef patty and fried egg smothered in brown gravy.  Loco Moco is a great gameday breakfast whether you're at home or tailgating.

Bacon Wrapped French Toast: Sweet french toast sticks wrapped in crunchy, salty bacon. A great hand held breakfast.

I love bacon for breakfast...anytime really.  Nothing says football like bacon.  This is an easy breakfast finger food for early morning football snacking.  It can be prepared ahead of time and refrigerated or frozen until ready to bake.  Then, it only takes 15 minutes in a 350 degree F oven to have a delicious crisp morning snack or breakfast on the go (time will vary if baking from frozen).

Bacon Pecan Maple Sticky Buns: Wow! Bacon and pecan topped cinnamon buns with a sticky maple syrup glaze. A fantastic start to gameday.

These are not health food but will certainly make early morning football viewing a treat.  These buns are decadent and delicious.  Made with 3 sticks of butter, 1 1/2 cups of sugar/maple syrup, and 1 pound of bacon these are not ideal for everyday consumption, but great for a special gameday treat.

French Onion Dip: A slightly beefy, very oniony, sour cream dip perfect for snacking. Dad will love it. It makes a great gameday snack too.

Late morning and afternoon games need to be served with dip.  When it's late enough to not want breakfast anymore; dips are a perfect snack food for gameday.  This is a homemade version of my favorite potato chip dip.  It's beefy, oniony, creamy, and delicious.

Loaded Baked Potato Dip: A dip made with sour cream, green onions, cheese, and bacon bits. It's like a loaded baked potato on a chip. #footballsnack #gamedaysnack

This dip is like a loaded baked potato on a chip.  When it makes an appearance at a gameday party it disappears in no time.  What's not to love?  It's made with football snacking staples; potato chips, sour cream, cheese, and bacon.  I think this could easily be called gameday in a dip.

If you like Loaded Baked Potato Dip then you will love these skins.  They are basically just dip on hollowed out pieces of baked potato.  They may be simple, but they taste awesome.  Again, bacon and potato products are great gameday foods.

Slow Cooker Roast Beef Sandwiches

Most of our football watching is over by late afternoon, but I know that's not the case for most of the U.S. so I had to include a meal in my gameday round up.  During a football game, simple slow cooked meals and sandwiches are the best (you don't want to spend too long in the kitchen and food that doesn't require utensils is preferred).  This recipe incorporates slow cooked beef, beer, and sandwiches making it a staple for football fare.

Sit back, watch some football, and enjoy.

Go Pirates!

Turkey Bacon Avocado Sub

Yum

Sliced turkey breast, crispy bacon, and creamy avocado stuffed into a soft chewy Honey Whole Wheat Hoagie Roll.

Turkey Bacon Avocado Sub: Sliced turkey breast, crispy bacon, and creamy avocado stuffed into a soft chewy Honey Whole Wheat Hoagie Roll.

My stomach is growling as I'm writing this.  This has to be the best sandwich ever.  The bread is homemade, soft, and delicious, the turkey is tender, the bacon is crisp and smokey, and the avocado is buttery.  These simple flavors combine to create one amazing sandwich.

Turkey Bacon Avocado Sub

Servings:  2-4

Ingredients:

2 hoagie rolls (foot long) like my Honey Whole Wheat Hoagie Rolls
12 turkey breast slices
4 strips bacon (cooked)
1-2 cups mashed avocado (with lime juice to keep from browning)
red onion, sliced
lettuce or spinach
other toppings of your choice

Turkey Bacon Avocado Sub: Sliced turkey breast, crispy bacon, and creamy avocado stuffed into a soft chewy Honey Whole Wheat Hoagie Roll.

Split the hoagie rolls in half long ways but don't cut all the way through.

Spread the rolls open and layer about 6 slices of turkey breast (more or less depending on how thick/thin) down the length of one side (the bottom side) of the sandwich.

Top the turkey with bacon, red onions, lettuce and any other toppings.

Then spread a thick layer (about 1/2-1 cup) of mashed avocado along the top side of the sandwich.  Season the avocado with salt, pepper, and hot sauce to your tastes and close the sandwich.

Cut the sandwich crosswise and serve.  Makes 2-foot long subs or 4-6 inch.  Serve with chips and/or vegetables.

Enjoy.

Turkey Bacon Cream Cheese Pinwheels

Yum

Soft and chewy English muffin dough rolled around cream cheese, turkey, and bacon.

Turkey Bacon Cream Cheese Pinwheels: Soft and chewy English muffin dough rolled around cream cheese, turkey, and bacon.

Pinwheels have been very popular lately.  I decided I wanted to jump on the band wagon and give them a try too but with some changes.  Pretty much every recipe I've seen for these uses store bought refrigerator crescent roll dough.  I know that makes these little wheels super quick and easy but I refuse to use store bought dough when I can make better.  So my next challenge was to figure out what kind of dough to use.  Sandwich bread, pizza, roll... the list  is endless.  Since I was making these as a breakfast item (to eat while watching early college football) I decided to use English muffin dough. The result was delicious.  The bread was soft and chewy and the filling was creamy and delicious with a crunch of bacon.  They didn't last long.

Turkey Bacon Cream Cheese Pinwheels: Soft and chewy English muffin dough rolled around cream cheese, turkey, and bacon.

Turkey Bacon Cream Cheese Pinwheels

Ingredients:

500-600 grams English muffin dough (1 recipe for Multigrain English Muffins or Light Wheat English Muffins)
Turkey slices
1/2 pound bacon, cooked and crumbled
1 package cream cheese (flavored would be great)
green onions, sliced (optional)

Turkey Bacon Cream Cheese Pinwheels: Soft and chewy English muffin dough rolled around cream cheese, turkey, and bacon.

Prepare the English muffin dough up through the first rise (I used Multigrain English Muffins but did not make them sourdough by replacing the 200g of barm with equal parts flour & water and adding 1 1/2 tsp yeast).

Instead of cutting and shaping the dough, into muffins, roll it out into a rectangle about 8 X 11 inches (about the size of a sheet of paper).

Onto the dough rectangle, spread the cream cheese (I didn't have flavored cream cheese so I also added green onions).

Top the cream cheese with the bacon crumbles and then turkey slices.  Starting at the long side roll the dough up into an 11 inch long roll.

Cut the roll into 12 slices (I find this easiest to use a serrated knife repeatedly dipped in flour).  Lay out the slices on a parchment lined sheet pan, cover with plastic wrap and refrigerate over night.

Or if you don't want to wait overnight allow the pinwheels to rise for about 30 minutes before baking.

The next morning, take the pinwheels out of the refrigerator and allow to come up to room temperature for about 1 hour.

Bake in a 350 degree F oven for 15-20 minutes until browned.

Let cool then enjoy.  Refrigerate any leftovers (if you have any).

Bacon Jam

Yum

Bacon, onions, and maple syrup cooked into a jam.  A great football snack, party snack, or just a snack on your own.

Bacon Jam: Bacon, onions, and maple syrup cooked into a jam. A great football snack, party snack, or just a snack on your own.

I've been interested in trying bacon jam for a while.  The first time I saw a post about it I was intrigued and knew that eventually I had to make it.  When one of my favorite video blogs, Food Wishes by Chef John, made bacon jam I was sold.

Bacon Jam: Bacon, onions, and maple syrup cooked into a jam. A great football snack, party snack, or just a snack on your own.

I love the Food Wishes videos.  Chef John makes it all look simple, he explains recipes well, and he's humorous.  I could watch those videos all day.  I watched the Bacon Jam one quite a few times until I decided I had the general recipe and techniques down and I set out to make my own.

Bacon Jam: Bacon, onions, and maple syrup cooked into a jam. A great football snack, party snack, or just a snack on your own.

Since this was my first time trying this recipe, and my husband was out of town, I made a much smaller batch that was just for me.  I had a half of a pack of bacon and one onion so that is what I used, keeping with the general instructions from the food wishes video.  I think it turned out great and I can't wait to make a bigger batch next time we have people over.

Bacon Jam

modified from Food Wishes

Ingredients:

1/2 pound bacon, chopped
1 onion, chopped
1-2 Tbsp maple syrup
1 Tbsp apple cider vinegar
fresh cracked pepper
dash dried thyme

Bacon Jam: Bacon, onions, and maple syrup cooked into a jam. A great football snack, party snack, or just a snack on your own.

Chop the raw bacon roughly and cook, in a large sauce pan, until very crispy.  Remove bacon to paper towels to drain.

Mean while pour off all but about 1 Tsp of the bacon grease and cook the onion, with some salt, in the same sauce pan.  Cook onion at medium heat until very soft.

Chop the cooked bacon more finely and then add it back to the pan with the onions.

Add the maple syrup, vinegar, thyme, pepper, and a splash of water.  Continue cooking until everything is well browned and jam like consistency.

Serve at room temperature with crackers or bread (I had cheese with mine too because I love cheese).  Makes 2 servings.

Enjoy.
