It's that time of year again.  Winter is the perfect time for chili.  Although, I love chili and will eat it anytime.  It's one of the few dishes I would happily eat every day.  I always make a big pot of it so I can eat leftovers for most of the week.  If there is any left it makes a great addition to Queso dip or Beer Cheese Nacho Sauce for a Chili Cheese dip.

Chili is also a great meal to serve a crowd.  It's simple, delicious, and you don't have to spend too much time in the kitchen.  Just a little work and then let the chili simmer on low heat (or in a slow cooker) for a while.  I believe it tastes even better the longer it sits.  Chili is a great meal or snack for any gameday or Superbowl party.

I make chili so often I usually don't think to post about it but I was looking back at some older posts and noticed my Chili con Carne post from 2013 needed updating.  The pictures were old and not great and I've started using a better recipe.  So I updated my old post with my new basic chili recipe that works with just about any kind of meat. Since my husband and I are trying to eat less red meat, we try to keep ground turkey on hand.  So I used ground turkey in my chili recipe with great results.

Kielbasa is easy, versatile, and delicious.  It's also quick to prepare because, usually, it comes fully cooked.  Just reheat and serve.  I love to keep some in my freezer for busy nights.

Cabbage is a natural pairing for kielbasa.  Cooking cabbage makes it tender and sweet and I always sprinkle on some caraway seeds for even more flavor.  I just love the simplicity of sausage and cabbage.  But don't let it simplicity fool you.  It's absolutely delicious.

The slow cooker makes this meal even easier.  Just chop up the cabbage (I added carrots for more color) and kielbasa the night before then throw it all in a slow cooker and set on low for 6-8 hours.  When you get home your house will smell amazing and dinner will be ready.

Slow Cooker Kielbasa and Cabbage


Servings:  4-6
Cook time:  6-8 hrs

Ingredients:

2 links kielbasa
1 head green cabbage
2-3 carrots
Caraway seeds to taste
1/2 cup sauerkraut and juice (optional)
Salt and pepper to taste

Slow Cooker Kielbasa and Cabbage:  A simple meal of polish sausage and cabbage cooked in a slow cooker.

Roughly chop cabbage.  Slice carrots (I used my food processor to do this quickly) with or without peel whatever you prefer. Cut sausage in 2-inch pieces (or leave whole...again whatever you like)

Place the cabbage and carrots in the bottom of a slow cooker.  Sprinkle on some caraway seeds, salt, and pepper.  Add sauerkraut if using (I just had some in the fridge and wanted to finish it...it does add a delightful little tang to the dish).  Top with the sausage and set on low for 6-8 hours.

Makes about 4-6 servings.  Serve with potatoes (you could probably add potatoes to the slow cooker but I preferred roasted), spicy mustard, and cold beer.

Slow Cooker Chicken Taco Meat

This is a great multi-purpose recipe.  It's a simple chicken recipe that can be cooked all day, in a slow cooker, while you are out of the house.  Best of all it can be used for so many meals.  Don't feel like tacos?  Try taco salad, burritos, taquitos, or just serve over rice.  You could even make a soup just add some frozen veggies, maybe beans, and chicken broth.  I only made enough for about 4 servings, but I'd suggest doubling or tripling the recipe so you can cook once and eat all week.  You can use the chicken as the base for a different meal every night.  I love multi-use recipes.

Slow Cooker Chicken Taco Meat


Servings:  4
Cook time:  5-8 hours in slow cooker

Ingredients:

1 pound boneless skinless chicken thighs
Salt & pepper
1/2 cup salsa
1 Tbsp garlic powder
1/2 Tbsp onion powder
1 Tbsp paprika
1/2 tsp cumin
1/8 tsp cinnamon (optional)
*or 2 Tbsp taco seasoning
Juice of 1 lime
Habanero flakes or hot peppers to taste (optional)

Slow Cooker Chicken Taco Meat:  A simple slow cooker recipe of chicken cooked in salsa and spices.  Great for tacos, taco salad, burritos, or even over rice.


Place thawed chicken thighs in the bowl of a slow cooker (you can use frozen it just takes a little longer to cook).

Season with salt and pepper then add the salsa, spices(*use individual spices or your favorite taco seasoning blend), and lime juice.  Stir until well combined and chicken is thoroughly covered.

Cook on low for 5-8 hours (or high for around 3) until chicken is tender and shreds easily.

Stir the shredded chicken and any leftover cooking liquid well.  Then remove chicken with a slotted spoon.

Add the chicken to whatever meal you like.  I made taco salad because, as you all (I really want to use my native NC colloquialism "all y'all"...usually accompanied by an all-encompassing hand motion) should know by now, it's my favorite.
