It's that time of year again.  Winter is the perfect time for chili.  Although, I love chili and will eat it anytime.  It's one of the few dishes I would happily eat every day.  I always make a big pot of it so I can eat leftovers for most of the week.  If there is any left it makes a great addition to Queso dip or Beer Cheese Nacho Sauce for a Chili Cheese dip.

Chili is also a great meal to serve a crowd.  It's simple, delicious, and you don't have to spend too much time in the kitchen.  Just a little work and then let the chili simmer on low heat (or in a slow cooker) for a while.  I believe it tastes even better the longer it sits.  Chili is a great meal or snack for any gameday or Superbowl party.

I make chili so often I usually don't think to post about it but I was looking back at some older posts and noticed my Chili con Carne post from 2013 needed updating.  The pictures were old and not great and I've started using a better recipe.  So I updated my old post with my new basic chili recipe that works with just about any kind of meat. Since my husband and I are trying to eat less red meat, we try to keep ground turkey on hand.  So I used ground turkey in my chili recipe with great results.

Turkey and Asparagus Skillet Pasta

Both of my parents worked while I was growing up so when my sisters and I were old enough to use the stove we each had a night to prepare dinner for the family.  Since we were not very experienced cooks my mom would buy easy to prepare meals like hamburger helper.  This dish reminds me of hamburger helper, from my childhood, but it's so much better.

This is great for a busy night when you don't have a lot of time to spend on dinner.  It's ready in about 30 minutes and it doesn't require much prep.  Also, it's all cooked in the same skillet so you don't have much clean-up.  My favorite thing about skillet pasta is that you don't have to move and lift a large pot of boiling water (I have balance problems so I have to use one hand to keep me balanced when I stand and I need both to lift and drain large pasta pots...hence my difficulty).  I think skillet pasta tastes even better than pasta the usual way.  As the pasta simmers in its sauce and water I think it picks up much more flavor than pasta just topped or tossed with sauce.  This is my new favorite way to cook pasta.

Turkey and Asparagus Skillet Pasta


Cook time:  30 minutes
Servings:  4-6

Ingredients:

1 pound turkey Italian sausage
1 Tbsp olive oil
1 28 oz can of stewed tomatoes
2 Tbsp dried basil
1 Tbsp dried minced onion
1/4-1/2 cup roasted garlic (or 2 Tbsp garlic powder)
1 bunch of asparagus, chopped (about 2 cups)
1 13 oz box of whole wheat rotini
3 cups water
salt and pepper to taste
1/2 tsp red pepper flakes (optional)
1/4 cup parmesan (optional)
1 cup mozzarella (optional)

Turkey and Asparagus Skillet Pasta:  A one dish meal of turkey Italian sausage and asparagus, with pasta in tomato sauce, plus cheese all cooked in only one skillet.

Brown the ground Italian sausage in a 12-inch skillet, over medium heat, until cooked through.

Meanwhile, add tomatoes, basil, onion, and garlic to blender and puree.

Once sausage is cooked pour in the olive oil and tomato puree.  Add the asparagus and pasta then pour in the water (until pasta is just covered). Add salt, pepper, and red pepper flakes (if using) and bring to a boil.

Reduce heat to low, cover and let simmer for 15-20 minutes until most of the liquid is absorbed and pasta is just a little undercooked (not quite al dente).

Turn off heat, stir in cheeses (if using), cover, and let set for about 10 minutes.  The last of the liquid will absorb into the pasta, pasta will be tender, and cheese melted.

Serve immediately.

Makes about 6 servings.

Turkey and Rougette Crescent Sandwich

I don't know a lot about cheese, but I know I love it.  I don't think I've tried any kind of cheese I don't like.  From simple American processed cheese slices to parmesan and brie I love it all.  I think it has a lot to do with my love of bread.  Many Friday nights my indulgence is a good crusty baguette and cheese for dinner (often my husband works late or goes out for drinks after work and I get most of the bread and cheese to myself).  I've been known to put away an entire baguette and at least 1/4 pound of cheese all by myself (probably not the healthiest but I do try not to do it too often).

Rougette is a new cheese for me.  It's smooth and creamy with a rind similar to brie in appearance, but the rind has a reddish orange color to it.  The flavor is mild and buttery.  It's like eating butter in smooth creamy cheese form.  As soon as I tried it I knew it would taste great melted on one of my buttery Easy Crescent Rolls.

So the next day I made this sandwich.  Turkey is a perfect compliment to this cheese because it doesn't have a strong flavor that would overpower the cheese.  I kept the sandwich simple because this is all about the cheese for me.

Turkey and Rougette Crescent Sandwich


Ingredients:

Crescent rolls
Turkey breast slices
Rougette cheese

Turkey and Rougette Crescent Sandwich:  Juicy turkey breast and warm creamy buttery Rougette cheese on a tender Crescent Roll.

Cut a large crescent roll in half lengthwise (toast or grill the cut sides of the roll if desired).

Place a thick slice of turkey breast (or more) on one-half of the roll and top with a thick slice of Rougette.

Broil the cheesy sandwich half for a few minutes until the cheese begins to melt then top with the remaining half of the roll.

Serve immediately with a salad, vegetables, or chips.

If you have it, this sandwich would be even better spread with a little pesto.

Turkey Bacon Avocado Sub

My stomach is growling as I'm writing this.  This has to be the best sandwich ever.  The bread is homemade, soft, and delicious, the turkey is tender, the bacon is crisp and smokey, and the avocado is buttery.  These simple flavors combine to create one amazing sandwich.

Turkey Bacon Avocado Sub

Servings:  2-4

Ingredients:

2 hoagie rolls (foot long) like my Honey Whole Wheat Hoagie Rolls
12 turkey breast slices
4 strips bacon (cooked)
1-2 cups mashed avocado (with lime juice to keep from browning)
red onion, sliced
lettuce or spinach
other toppings of your choice

Turkey Bacon Avocado Sub:  Sliced turkey breast, crispy bacon, and creamy avocado stuffed into a soft chewy Honey Whole Wheat Hoagie Roll.

Split the hoagie rolls in half long ways but don't cut all the way through.

Spread the rolls open and layer about 6 slices of turkey breast (more or less depending on how thick/thin) down the length of one side (the bottom side) of the sandwich.

Top the turkey with bacon, red onions, lettuce and any other toppings.

Then spread a thick layer (about 1/2-1 cup) of mashed avocado along the top side of the sandwich.  Season the avocado with salt, pepper, and hot sauce to your tastes and close the sandwich.

Cut the sandwich crosswise and serve.  Makes 2-foot long subs or 4-6 inch.  Serve with chips and/or vegetables.
