I had another good month September.  I'm really happy to have others interested in what I'm making.  I don't expect to be famous but I think I've made some friends and people are actually interested in my blog.  It's so much more fun when people are actually paying attention.  Another cool thing is that my blog is getting closer to 100,000 page views.  That might not seem like much but I never expected anyone but my family to even see my blog when I started so I'm pleased.

Chicken and Black Bean Salsa Nachos

Chicken and Black Bean Salsa Nachos:  Crunchy tortilla chips layered with leftover rotisserie chicken, black bean and corn salsa, and shredded cheese.



Nachos are always a great gameday snack, or even dinner.  In my house anything can be used for nachos.  We've made Bacon Nachos, left over prime rib Nachos, plain cheese and jalapeno nachos, and many more varieties.  This time I had left over rotisserie chicken and left over Black Bean and Corn Salsa so I used these to make nachos.  All nachos are tasty and these did not disappoint.  The chips were crunchy, the cheese melted perfectly, and every chip had toppings on it.  We've got nacho making down to an art.

Chicken and Black Bean Salsa Nachos


Ingredients:

Tortilla chips
Shredded cheese
Black Bean and Corn Salsa
Leftover rotisserie chicken
Guacamole

Chicken and Black Bean Salsa Nachos:  Crunchy tortilla chips layered with leftover rotisserie chicken, black bean and corn salsa, and shredded cheese.

On an oven proof platter lay down a layer of tortilla chips.

Top the chips with cheese, chicken, and salsa (I put a little cheese below the other toppings and then again on top so when melted it would help hold everything on the chip).  Then top with another layer of chips and toppings finishing with a sprinkle of cheese.

Bake at 200F for about 10-15 minutes to melt the center cheese, then broil for  few minute until the top cheese is melted.

Servings depend on the size of the platter and how many layers you make.  We use a roughly 9x12 pan with 2-3 layers for 2 people.

Top with a dollop of guacamole or sour cream and serve with more guacamole, sour cream, and/or salsa.

Black Bean and Corn Salsa

I really love black beans.  They are easy to cook (or just dump from a can) and I think they're delicious.  I will add black beans to just about any recipe and there are good reasons for adding them to any diet.  These little beans are full of good stuff for you.  They are high in protein and fiber while being low in calories and they are a good source of iron.  Click here for more information on the health benefits of black beans.

Corn is also delicious and full of nutrition.  It contains antioxidants, fiber and when paired with beans it is believed to boost nutrient absorption from both.  Click here for more information.  I just love this salsa and not just because it's healthy but I love the added texture and flavors that the beans and corn add and it makes a salsa snack much more filling.  It even makes a great lunch.

Black Bean and Corn Salsa


Ingredients:

2 cups black beans
1 can of corn
4 roma tomatoes (cored, seeded, and chopped)
1 bunch cilantro
1 red onion
3-4 jalapenos (more or less to taste)
2-3 cloves garlic (more or less to taste)
2 limes
salt to taste

Black Bean and Corn Salsa:  Delicious salsa packed with healthy black beans and corn.  Great as a gameday snack, with tacos, or anytime.

Finely mince and chop the onion, jalapenos, garlic, and cilantro.  I put them all in my food processor and let it go until they were well mixed and finely minced.

To the onion and jalapeno mixture add the beans, corn, tomatoes, juice of 2 limes, and salt.  Stir and toss until thoroughly mixed.  Refrigerate for at least 1 hours to allow the flavors to meld.

Serve with tortilla chips.

Enjoy.
