Delicious salsa packed with healthy black beans and corn. Great as a gameday snack, with tacos, or anytime.

I really love black beans. They are easy to cook (or just dump from a can) and I think they're delicious. I will add black beans to just about any recipe and there are good reasons for adding them to any diet. These little beans are full of good stuff for you. I just love this salsa and not just because it's healthy but I love the added texture and flavors that the beans and corn add and it makes a salsa snack much more filling. It even makes a great lunch.
Black Bean and Corn Salsa
Ingredients:
2 cups black beans
1 can of corn
4 roma tomatoes (cored, seeded, and chopped)
1 bunch cilantro
1 red onion
3-4 jalapenos (more or less to taste)
2-3 cloves garlic (more or less to taste)
2 limes
salt to taste
Finely mince and chop the onion, jalapenos, garlic, and cilantro. I put them all in my food processor and let it go until they were well mixed and finely minced.
To the onion and jalapeno mixture add the beans, corn, tomatoes, juice of 2 limes, and salt. Stir and toss until thoroughly mixed. Refrigerate for at least 1 hours to allow the flavors to meld.
Serve with tortilla chips.
