Mushroom and Swiss Patty Melt

Grilled cheese sandwiches are a favorite of mine.  I love melted cheese and buttery crisp grilled bread.  I was planning to make a grilled cheese with some Swiss cheese I had when I thought I'd add a burger patty to make it more filling for dinner.  Once I decided to add the burger, mushrooms and onions were an obvious addition.  I love Mushroom and Swiss burgers too. This patty melt is a combination of two favorites.  A mushroom and Swiss burger and a grilled cheese sandwich.  I had a package of precooked frozen burger patties in my freezer so I just heated them in the microwave to make this super simple.  It made a delicious and easy dinner.

Ingredients:

1 Tbsp butter
5 large mushrooms, sliced
1/2 onion, chopped
few dashes Worcestershire sauce
salt and pepper to taste
4 slices of bread
Butter (at room temperature or spreadable margarine)
4 slices Swiss cheese
2 burger patties

Mushroom and Swiss Patty Melt:  A burger patty, Swiss cheese, and sauteed mushrooms and onions, sandwiched between 2 slices of bread then grilled until hot and melty.

Melt the butter in a frying pan over medium heat.  Add the mushrooms and onions.  Saute until tender.

Add a few dashes of Worcestershire sauce, and a little salt and pepper to taste.  Stir and keep warm.

Meanwhile, thaw and heat the burger patties if frozen or use just cooked patties.

Butter all four slices of bread on one side only.

Place 2 slices of buttered bread, butter side down, on a warm griddle (or frying pan).

Add a slice of cheese to each.  Then a burger patty, half of the mushroom mixture, another slice of cheese, and finish with a slice of bread butter side up.

Turn heat to medium-low to medium, cover with a lid (covering the sandwiches helps the top slice of cheese melt too so the bread won't slide off when you flip them), and heat until the bottom slice of bread is dark-golden brown and the cheese has started to melt.

Very carefully flip the sandwiches and cook the other side until brown.  This would be much quicker and simpler with a panini press so use it if you got it.  I don't :(

Cut diagonally (don't ask me why, but I can't eat a grilled cheese sandwich, or patty melt, unless it's cut diagonally) and serve warm.

Makes 2 sandwiches.

To many Labor Day marks the end of summer.  Time to get out your cool weather clothes and go back to school.  I'm no longer in school but it does feel like summer is coming to a close (although I think the official end of summer isn't until the 22nd of September).  Maybe because so much of our lives revolves around the school year whether you are in school, have children, or not.  Long weekend holidays in the summer months always call for cookouts.  I think people crave to be outside and absorb as much of the summer sun and warmth as you can to get through the winter.  So if you need some ideas for your cookout I've gathered some burger recipes from the Great Idea Thursdays linkparty and a couple of my own).

Asian Pork Burgers

Since I do so much shopping in Chinatown I decided to make a burger showcasing all of my favorite Asian-inspired flavors. Burgers are a very American food so Asian-American burgers might be a better title...oh well for simplicity's sake these are Asian Burgers.  These burgers, no matter what you call them, are tasty.  They are juicy and spicy and full of flavor.

Asian Pork Burgers:  Ground #pork mixed with my favorite Asian-inspired flavors, formed into patties, and resting on a sesame seed bun.  #burgers

Asian Pork Burgers


Ingredients:

1 pound ground pork
1 Tbsp minced ginger
1 Tbsp minced garlic
1/4 cup chopped green onions
1 Tbsp soy sauce
1-2 tsp sriracha
1 egg

Asian Pork Burgers:  ginger, garlic, green onions, soy sauce and sriracha.

Mix together all the spices in a large bowl.  Add the ground pork and knead/mix to combine thoroughly. I used my hands (with latex gloves for easy cleanup).

Asian Pork Burgers:  patties

Separate into 4 roughly equal sections and form into patties.  Cover and refrigerate overnight.

Heat a skillet (I used cast iron) over medium heat.  Add the patties and cook for 3-5 minutes per side until thoroughly cooked.  I added cheese on top of each burger a little before removing from the pan (cheese is optional).  Or you could grill these.

Allow the burgers to rest for a minute or so.  

I added a little hoisin sauteed bok choy which is optional, you can add any condiment you like or leave plain.

Makes 4 burgers.
