The first official day of summer is Sunday (June 21st).  As the temperature rises no one wants to heat up the kitchen or eat hot heavy meals.  Here are salads to save the day.  I've compiled 12 of my best and most filling (yet still light) salads for summer meals.  Turn off the oven and enjoy some fresh and light summer salads.

Avocado B.L.T. Salad: Crisp green lettuce tossed in balsamic vinaigrette and topped with crispy bacon, juicy tomatoes, and creamy avocado.
Char Siu Vermicelli: A salad of crisp vegetables and lettuce with noodles and pork all brought together with a sweet, salty, spicy, and sour sauce.
Greek Salad: A fresh and delicious salad with tomatoes, cucumber, red onion, red bell pepper, and garbanzo beans tossed in a lemon and oregano dressing.

Lamb Salad: A green salad topped with left over Herb Roasted Leg of Lamb, olives, tomatoes, and feta.

Lemongrass Chicken Vermicelli: A fresh salad with herbs, vegetables, and rice noodles topped with juicy chicken flavored with lemongrass and other southeast Asian flavors.
Pork Tenderloin Salad: Tender Herb Roasted Pork Tenderloin on a green salad tossed in a lemon thyme dressing.
Seared Ahi Salad: Strips of seared tuna steak atop a green salad tossed in an Asian vinaigrette

Spicy Poke Salad: Spicy poke (pronounced poke-eh) topping a mixed green salad.

The Best Salad Ever: A green salad topped with blue cheese, chicken, strawberries, and candied pecans.
