Soup is a great way to clean out your refrigerator.  You can make soup with all kinds of meat, vegetables, legumes, grains, and/or pasta.  Here are 7 of my soup recipes that are simple and delicious.  Many are meatless, vegetarian, or vegan and all will help keep you warm.

Pureed Carrot Soup



A creamy, vegan, soup made with pureed carrots, onions, and beans in a vegetable broth with a hint of dill.  It's filling enough for a meal but also great with a small sandwich.

Lentil soup

Lentils are powerful little legumes.  They are packed with protein and fiber while being relatively low in calories.  They are very versatile too.  Lentils make great curries, soups, stew, and salads.  Another great thing about lentils is that they are quick to cook compared to other legumes like beans and don't require soaking (although I've read that soaking them overnight helps make their nutrients more digestible...I usually don't plan ahead enough to do that, though).

Lentil Soup

Servings:  2-4
Cooking time:  45-60 minutes

Ingredients:

1 Tbsp olive oil
1 small carrot. diced small
2 stalks celery, diced small
1/2 medium onion, diced
1 jalapeno, diced
1 spicy sausage (I used hot Portuguese sausage), sliced
2 cloves garlic, minced
1 cup lentils (I think I used green lentils)
1 can of diced tomatoes, drained
3 cups water
1 tsp chicken bullion
1 tsp ground cumin
1/2 tsp ground coriander
1 Tbsp paprika
1/4 tsp smoked paprika (optional)
Salt and pepper to taste

Lentil Soup:  A bold and spicy soup with hot Portuguese sausage and healthy lentils.

In a large stock pot, over medium heat, cook the vegetables in oil until tender.  Add the sausage and continue cooking until it curls then add the garlic and lentils.

Stir and continue cooking until garlic is fragrant then add the tomatoes, water, and bullion.

Add the spices and bring to a boil.

Lower the temperature and simmer, over low heat, for about 30 minutes or until lentils are tender.  Add more water or chicken broth if needed.  Taste for seasoning and adjust.

Makes 2-4 servings.

Mushroom and Wild Rice Soup

Wild rice soup is a dish I learned about in Minnesota.  It's perfect for wintertime because it's warm, creamy, hardy, and comforting.  This is comfort food at it's best.  Usually it's made with chicken but I used inexpensive mushrooms.  Not only were the mushrooms less expensive than meat but I hoped they would help lower the calorie count of this creamy soup.  I used real cream but you could lighten it more by using half and half or milk but I love the comfort and creaminess of the real stuff (and so does my husband the Minnesotan).  This soup has great fiber from the wild rice which gives the soup a wonderful chewy component that makes it very satisfying.  It's a meal of a soup.  Add some crackers if you like and this soup will make you feel warm, full, and satisfied.

Mushroom and Wild Rice Soup


Ingredients:

1/4 cup butter
1 large onion, chopped
1 medium carrot, chopped
4 stalks celery, chopped
4 cups sliced mushrooms (about 20-30 mushrooms)
1/2 tsp Thyme
1/4 cup flour
4-6 cups chicken or vegetable broth
1 cup dry wild rice, cooked until soft (about 3-4 cups cooked)
4 oz cream

Mushroom and Wild Rice Soup:  A creamy, meatless, soup with mushrooms and wild rice.  It's warm comfort food for a cold night.

Saute the vegetables in butter, in a large stock pot, until tender.  Add the mushrooms and thyme and cook until the mushrooms soften.  Sprinkle on some salt and pepper.

Stir in the flour and cook for a minute or two more to cook out the raw taste of the flour but not darken it at all.  Then pour in 4 cups broth.  Let the soup just come to a boil and reduce heat to simmer.

Add the cooked rice and allow the soup to simmer until thickened (add more broth if it looks too thick) then add cream.  Heat through, taste for seasoning (add more salt, pepper, and/or thyme as needed), and remove from heat.

Serve immediately with crackers.  Makes about 6 servings.

Green peas are very nutritious.  They are high in fiber and protein while being low in fat and contain many antioxidants.  My husband loves peas and we always have a huge bag of them in the freezer.  You will notice two different looking soups in this post because they are from different batches (same basic recipe with just minor alterations).  I was pleasantly surprised when my husband started requesting this soup regularly.  I've made it often since the first post.  I love the flavor and nutritional benefits of this soup and am happy my husband does too.  It's a quick and delicious way to prepare frozen peas.

I have a kind of love-hate relationship with peas.  I know that they are healthy and try to use them regularly but they aren't my favorite vegetable.  It's not even the taste.  I don't mind the flavor but it's the work it takes to eat them that makes me less of a fan.  This may seem like a silly reason to avoid a food but I can't help it.  I'll have peas on my plate and try to take a scoop of them only to have them roll away or fall off my fork or spoon.  It should not be so difficult to get your food into your mouth!

That is why this soup is so great.  It's simple and delicious and stays on your spoon.  It also contains a lot of peas.  1 1/2 cups per serving to be exact and that is a lot of fiber and protein.  I don't think even my husband (the pea lover) would put that many peas on his plate.

Green Pea Soup


Cook time:  45 minutes
Servings:  2

Ingredients:

1 Tbsp butter or oil
1 cup onions, chopped
1 clove garlic, smashed
3 cups green peas, frozen
2 cups chicken broth or vegetable broth
2 tsp dried basil
2 Tbsp guacamole/avocado puree (or cream)
salt and pepper to taste

In a large sauce pan, saute the onions in butter or oil until tender.  Add the garlic, peas, broth, and basil and bring to a boil.

Lower heat and let simmer for about 30 minutes.

Remove from heat and puree the soup with the guacamole until creamy.  (Most of the recipes I looked at used cream to make the soup creamier.  That would be great but I didn't have cream on hand and did have some guac.  Avocados are creamy so that's what I used and it was delicious.  It also makes this soup vegan, if your guac is vegan, and if you use oil and vegetable broth too.  I've also used sour cream in this soup with great results.)

Taste for seasoning and add salt and pepper to taste.

Makes 2 servings.  It's great on its own or paired with crackers or a sandwich.  (my husband added some Habanero Hot Sauce to his and said it was delicious)
