Leftover Lo Mein

Not lo mein that is left over but lo mein made from leftovers.  A stir fry made with leftover spaghetti noodles and veggies.

If you want to re-purpose leftover spaghetti noodles this is the recipe for you.  To me lo mein is a lot like fried rice, it's a great way to clean out the fridge.  I had at least 2 servings of spaghetti noodles left over and no more sauce to top them so I decided to use them in a different way.  I made this vegetarian but if you have leftover meat you could add that too.


Leftover Lo Mein


Ingredients:

1-2 Tbsp canola oil
2 Tbsp ginger, minced
2 Tbsp garlic, minced
1 onion, chopped
4-5 cups mixed vegetables (carrot, broccoli, sugar snap peas, and summer squash)
leftover spaghetti noodles (about 2 servings worth)
*if you have leftover meat feel free to add that too, optional
2 Tbsp soy sauce
1 Tbsp oyster sauce, optional
dash of sesame oil
1/4 cup rice wine
1 tsp chili oil


Stir together the sauces (omit the oyster sauce for strict vegetarian), sesame oil, rice wine, and chili oil in a small bowl and set aside.


Heat canola oil in a large skillet over medium high heat until it shimmers.  Add the ginger and garlic and stir fry until fragrant (just a few seconds).


Add the onions and veggies and stir fry for a couple of minutes until tender.  Then add the noodles (*and any pre-cooked meat) and sauce.


Stir until thoroughly mixed and noodles (*and meat if using) are heated through.  Serve immediately.




Makes 4 servings.
