I live in a small apartment.  Did I mention that this apartment is in Hawaii?  All apartments and houses are small here, unless you are a millionaire.  That's okay because it's just me and my husband and the small apartment works for us and we get to live in Hawaii.  Anyway, I mention this to tell you that the outside facing wall is all window and sliding glass doors leading out to the lanai (porch/balcony).  We live pretty high up so we can leave our sliding glass doors open all the time (it's too high for bugs and too high for criminals).  I love it.  The temperature is usually perfect and there is typically a nice breeze so it hardly ever gets too hot.  But sometimes it gets kind of hot.  We get the afternoon sun shining in our windows so that's usually when the temperature rises a bit.  I could close up, pull down the blinds, and turn on the air but I like the city noise and fresh air so, when needed, I cool down with cool drinks and frozen treats.

I've been seeing many posts about cute popsicles made out of all kinds of things but my favorite treat is chocolate.  I also don't have any popsicle molds so I have to improvise.  That's why this pudding popsicle is so great.  The pudding comes in it's own container, you just add a popsicle stick and freeze.  Nothing could be simpler.  I used Jello pudding cups but any brand would work and any flavor.  I also used the sugar free pudding because I can't tell much difference so why eat unnecessary sugar.  This isn't so much of a recipe as a method but it makes a great frozen treat.  There is no excuse not to have some of these in your freezer at all times.

Pudding Popsicles:  A simple way to turn your favorite pudding into a frozen treat.

Leaving the foil cover on the pudding cup, pierce a small whole in the top.  Side a popsicle stick into this whole and give the bottom of the pudding cup a couple of wacks on the table or counter top to help settle the pudding.  Place in the freezer and freeze for 2-3 hours before enjoying.

To remove the popsicle, take off foil cover, dunk in warm water and pull and twist on the stick until it the frozen pudding slides out of the cup.

Easy peasy and you can use any type or flavor of pudding even use homemade pudding in your own popsicle molds.  Have fun and experiment.  Enjoy.

  8. Hi Julie, I love that I don't have to completely close up my apartment. That's one great thing about Hawaii, so much is open air and the temperature is relatively mild so you hardly ever need to use the a/c

  15. Hi Adrian, thanks for stopping by. I grew up in NC which gets pretty hot and humid in the summer, then I lived in Houston, TX for a few years and it's crazy hot there all the time (I imagine it's similar to Florida). I definitely prefer where I live now and always giggle when people here talk about how hot and humid it is (it not very humid for those of us who know what real humidity is). These are great cold treats for hot days, and because it's pudding I found that as it melted it didn't drip and make my fingers sticky so that's a bonus.
